Rosemary and Orange Crusted Natural Beef Strip Loin Roast

Ingredients

1 5-pound Aspen Ridge® strip loin roast

4 teaspoons kosher salt

8 garlic cloves, peeled

1/4 cup fresh rosemary leaves, chopped

Zest of 2 large oranges

3 tablespoons extra virgin olive oil

1 tablespoon cracked black pepper

Preparation

  1. Pat roast dry.
  2. In a food processer, add salt, garlic, rosemary, orange zest, olive oil, and pepper. Pulse until finely chopped.
  3. Cover roast in mixture. Place fat side up on a rack in a roasting pan.
  4. Preheat oven to 500 F. Place roast in oven and reduce temperature to 350 F. Roast until an instant-read thermometer registers 130 F for medium-rare, 70-90 minutes.
  5. Transfer roast to cutting board, tent with foil, and let rest for 15 minutes. Slice against the grain and enjoy.
