Ingredients

1 Aspen Ridge New York Strip Steak

8 oz rice noodles

2 Tbsp soy sauce

1 Tbsp fish sauce

2 cloves garlic, minced

2 Tbsp brown sugar

2 Tbsp lime juice

1 tsp cayenne

1 bell pepper, julliened

1/2 onion, julienned

2 eggs

1/2 C bean sprouts

3 green onion

1/4 C chopped peanuts

Preparation

  1. Boil a pot of water, heavily salted, then add noodles to the water. Cook until slightly al dente. Drain, rinse and set aside.
  2. In a small pan, mix together the soy sauce, fish sauce, garlic, brown sugar, and lime juice. Cook over low heat until just warm, but do not boil or simmer. Keep warm until ready to use.
  3. In a large pan, over medium-high heat, add oil, onion, and bell peppers and cook for approximately 2 minutes. Add the sliced steak to the pan and cook for approximately 4-5 minutes, to the desired temperature (this will vary based on how thinly you slice your steak).
  4. Push all ingredients to the side of the pan and add the eggs. Cook eggs for approximately 30 seconds then mix, making sure they're fully incorporated throughout the dish.
  5. Add the noodles and sauce to the large pan and mix everything together until all of the noodles are coated.
  6. Serve and top with bean sprouts, chopped green onions, and roasted peanuts.
