Soy Glazed Flank Steak with Zoodles

Ingredients

2 ¼ pounds flank steak

1 Tbsp sesame oil

1 Tbsp minced garlic

1 Tbsp finely grated fresh ginger

1/2 cup soy sauce

1/3 cup brown sugar

1/2 tsp crushed red pepper

Ground pepper

Thinly sliced scallions and lime wedges for garnish

Preparation

  1. In a small saucepan, heat the sesame oil.
  2. Add the garlic and ginger, and cook over moderately high heat, stirring occasionally, until the garlic begins to turn golden.
  3. Add the soy sauce, brown sugar, and crushed red pepper, and cook, stirring until syrupy, about 3 minutes, then let glaze cool.
  4. Lay the flank steak on a skillet or griddle. Grill it for 3 to 4 minutes per side. During the last minute, brush all but 2 tablespoons of the glaze over the steak. Grill to desired temperature: 125°F for rare, 130°F for medium rare, 135°F for medium. Transfer the steak to a cutting board and let stand for 5 minutes. According to foodsafety.gov, the minimum safe temperature is 145°F for fresh beef.
  5. Cook zoodles according to package instructions.
  6. Thinly slice the steak against the grain and brush it with the reserved 2 tablespoons of glaze.
  7. Transfer to plates, sprinkle with scallions, and serve with lime wedges. Enjoy!
