Ingredients
1/3 cup chopped cilantro
1/4 cup plus 1 tablespoon lime juice
1/4 cup olive oil
3 cloves garlic, minced
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 pound Aspen Ridge® Natural Angus Beef, cut into 4 pieces
1/2 cup sour cream
1/2 teaspoon ground chipotle
8 (8-inch) corn tortillas
1 large avocado, sliced
2 cups shredded green cabbage
1/4 cup chopped green olives
Preparation

Combine the cilantro, 1/4 cup lime juice, olive oil, garlic and pepper with the steak in a non-reactive dish or resealable plastic bag. Marinate 30 minutes at room temperature.

While steak is marinating, stir together the remaining tablespoon of lime juice, sour cream and chipotle. Season with a pinch of salt.

Preheat a grill or grill pan to high. Take the steak out of the marinade and pat dry. Sprinkle with the salt and grill 2-3 minutes per side for medium-rare. Let stand 5 minutes before thinly slicing against the grain.

Heat the tortillas on the grill, in a microwave or in the oven. Serve with the sliced steak, avocado, cabbage, olives and sour cream mixture and let diners assemble their own tacos.
