Grilled Sirloin Steak with Lemon Salsa Verde

Grill the perfect Natural Angus sirloin steak prepared just the way you like it, medium rare or medium.
Ingredients
4 Aspen Ridge® Natural Angus Beef sirloin filets, tied and cut 1 1/4-inch thick
1 small garlic clove
2 teaspoons coarse salt
1/2 lemon (with peel), seeded and finely chopped
1/2 cup coarsely chopped Italian parsley
1/3 cup coarsely chopped cilantro
1/4 cup coarsely chopped mint
2 Tablespoons lemon juice
1/2 cup extra-virgin olive oil
3/4 teaspoon freshly ground black pepper
1 Tablespoon minced anchovy (optional)
1 Tablespoon vegetable oil
Preparation

Preheat a grill to high and oil the grates. Remove the filets from the refrigerator while making the salsa.

Chop the garlic with 1 teaspoon of salt until it becomes a paste. Transfer to a medium bowl and add the lemon, parsley, cilantro, mint, lemon juice and olive oil in a medium bowl. Stir in ¼ teaspoon of pepper and the anchovy (if using) and set aside.

Brush steaks with the oil and season with the remaining salt and pepper. Grill steaks for 3 minutes on each side for medium-rare, 4-5 minutes per side for medium. Transfer to a cutting board and let rest 5 minutes before slicing. Serve with the Lemon Salsa Verde.
