Lemongrass Beef Satay Skewers Appetizer

These tender beef flap steak (bavette) skewers are marinated in an umami lemongrass purée, grilled, and served with a craveable peanut sauce and spicy, quick pickles. Learn more about flap steak.

Ingredients

For the Beef:

2 pounds Aspen Ridge® Natural Angus Beef Sirloin Flap (bavette), sliced into 1/2-inch-thick pieces

2 Tbsp lemongrass purée

2 cloves garlic, minced

2 Tbsp soy sauce

1 Tbsp fish sauce

2 Tbsp brown sugar

1/2 tsp kosher salt

1/4 cup green onion, minced

1/2 tsp black pepper

16 bamboo skewers, soaked in hot water for at least 30 minutes (optional, can use metal skewers instead)

For the Quick Pickles:

1 English cucumber, thinly sliced into circles

1/4 cup red onion, diced

1 red chili, thinly sliced into rounds

1/2 tsp kosher salt

3 Tbsp sugar

1/3 cup rice wine vinegar

For the Peanut Sauce:

1/3 cup peanut butter (use homogenized, not natural)

2 Tbsp honey

2 Tbsp soy sauce

1 tsp gingerroot, freshly minced

3/4 tsp garlic, minced

1/2 tsp Asian chili sauce with garlic

1 Tbsp rice wine vinegar, unseasoned

2 Tbsp water

Preparation

  1. If using bamboo skewers (vs. metal skewers) soak in hot water until ready to cook beef.
  2. Slice beef against the grain for a perfectly tender bite. Thread meat onto skewers, place in 12” baking dish.
  3. Purée marinade ingredients in blender or food processor. Pour over the beef in dish, gently tossing to coat all skewers. Marinate in refrigerator for one hour.
  4. Prepare quick pickles by tossing all ingredients together. Refrigerate until needed.
  5. Prepare peanut sauce by whisking all ingredients together until smooth. Refrigerate until needed.
  6. After beef has been marinated for one hour, preheat grill. Remove beef from marinade and shake off excess. Arrange skewers on the preheated grill and sear on each side, approximately 2 minutes per side to medium rare, or your desired doneness, using a thermometer in the center of the meat to check internal temperature.
  7. Allow to rest for 2-3 minutes before serving with peanut sauce and quick pickles.
